Lottie's Cheese & Cranberry Christmas Biscuits Light and golden with flakes of cranberry. These look good when cut into star shapes for christmas but great anytime of year. Ingredients 2 cups (300g) plain flour 1/3 cup (60ml) olive oil 2 cups (200g) grated cheese (use a mix of cheddar and parmesan if you wish) 1/4 cup (25g) dried cranberries chopped in a blender 1/2-3/4 cup (100-200ml) water 1 egg for glazing Method Pre heat oven to 180°c, gas mark 4 Cover baking tray in baking paper Place all ingredientsapart from the water in a large bowl and mix thoroughly. Slowly add the water till you can stick the dough into a ball. Tip out on to a floured worktop and knead untill smooth. Roll out untill1/4 -1/2 inch thick and cut out shapes using your cookie cutter. Transfer onto baking tray. Brush with egg and place in oven. Makes around 35 middle sized biscuites. |
